"The reasons for the publication of this Volume—the First of a Series of Practical Manuals which were to be called the 'All About It' Books—were thus explained in a Prospectus issued a few months ago, and approved by the late Mrs. S. O. Beeton:—
Many wishes have been expressed to the Authoress of the 'Book of Household Management' for a cheap Work on Cookery, which should give, in a form easy of reference, a large number of practical Recipes, suitable for the daily wants of families of moderate income. To meet this demand, the present volume has been prepared. It will be found to contain a great variety of useful and economical Recipes, and, it is hoped, will be the means of supplying a desideratum in the cookery literature of the country.
In order to enhance the value of the Work, numerous Woodcuts have been introduced, illustrating the jointing, carving, and trussing of meat and poultry, as well as the proper mode of sending dishes to table. The aim of the Authoress has been to make the 'Dictionary of Every-Day Cookery' as complete and comprehensive as possible, embracing, in addition to the Recipes, instructions on all points necessary to the success of the domestic cook.
The arrangement adopted in this Work is that of an alphabetical Dictionary, which, it is believed, will be found more convenient for reference than any other that could have been selected. The Recipes are given in the plainest possible language, and care has been taken to avoid the use of technical terms, so that the Work may be readily understood by all who consult its pages."
